Just like the original from the turn of the 19th century, only better!! This version features some veg and a little more flavor!
Yields 3 1/2 cups
1/4 Cup butter
1/4 Cup all purpose flour
3 Cups Evaporated milk or whole milk
2.5 oz Jar or dried beef (4 oz if you like it more meaty)
1/3 Cup sliced celery fresh, dried or canned
1/2 Cup sliced mushrooms fresh, dried or canned
1 Tbsp dried onion
2 Dashes worcestershire sauce
1 Tsp powdered chicken bullion
1/2 Tsp paprika
*Pinch of cayenne (optional)
Salt & pepper to taste
Chop and rinse beef!!! Do NOT leave out this step! It will be way too salty.
In a medium pan, add butter and flour making a roux. Cook for 3 minutes. Whisk in milk slowly. Add worcestershire, bullion, paprika, cayenne, salt and pepper. Cook until thickened, about 3 minutes on a medium heat.
Add in in chopped beef and veg.
Serve over slices of toast or toasted biscuits.
