Super delicious and beautiful enough to serve with brunch. Change it up, make it your way!
Yields 2
2 Slices bread, toasted
2 Large eggs, separated
2 Tsp dijon mustard
2 Tsp heavy cream
Salt & pepper to taste
1/2 Cup shredded cheese (gruyere, parm, swiss, cheddar, white cheddar, smoked gouda, manchego…….)
Heat your oven to 375 degrees f.
Whisk egg white until stiff peaks form. (At this point you can add a pinch of salt, a tsp of minced fresh herbs, a Tbsp finely grated cheese… however you want your egg whits flavored. Just don’t mix in so much you weigh them down)
Line a baking sheet pan with foil or parchment paper. Spread dijon mustard on toast.
Pile egg white onto toast, making a well in top. Slip your egg yolk into the well. Top with cream, salt and pepper and sprinkle cheese over entire top.
Bake @ 375 degrees f 10 minutes for soft yolk, 12-15 minutes for cooked yolk.
These are as delicious as they are, but you can change them up by adding flavored mayo to the toast, different meats like bacon, canadian bacon, sausage, ham, prosciutto, smoked salmon or veg such as avocado, spinach, sliced tomato. You could add a slice of smoked cheese to the toast, spread on goat or cream cheese, or even a cheese spread. You can also serve a beautiful sauce over the top such as hollandaise, bechamel, mornay, mousseline…. Sprinkle fresh herbs over the tops such as chives, tarragon, dill, oregano, sage… Anything goes!!!
