Sage Sausage

This classic Sage Sausage is perfect for freezer banking! This sausage is yummy and perfectly customizable. Make some today for your family!

Ingredients and Variations

Ingredients: ground pork, dried sage, garlic powder, brown sugar, ground thyme, cayenne pepper, ground cloves, salt and pepper.

Variations: Use the ground meat of your choice, leave out the sugar if you desire (it does help with browning), or add extra sugar and maple extract for a Maple sausage. Add shredded apple or pineapple and finely diced jalapeno for spicy sweet sausage, add chopped peaches and habanero pepper, add extra garlic and grated onion for a garlic sausage, the possibilities are endless!!!

Ingredients

  • 2 lbs ground pork

  • 1 1/2 – 2 tsp dried sage

  • 1/2 – 1 tsp ground thyme

  • 2 tsp garlic powder

  • 1/4 cup brown sugar

  • 1/4 tsp ground cloves

  • 1/2 tsp Kosher or sea salt

  • 1/2 tsp pepper

  • 1/4 tsp cayenne *optional

Directions

  • Mix together well.
  • scoop approx. 2 tablespoons of meat mixture in your hand, roll into a ball and flatten slightly into a patty. Place on a lined sheet pan and freeze overnight. Place patties into a freezer bag and store in freezer until ready to use.
  • To use: Thaw overnight for best results place into a frying pan with 2 inches of water and cook covered until water evaporates, then fry until golden brown, about 2 minutes on each side.
