Thanksgiving Wellingtons

Ingredients

  • 1 lb Ground turkey or chicken

  • 1/2 box Stuffing mix

  • 1 pkg Onion soup mix or 3 tbsp of homemade soup mix

  • 2 Large eggs

  • 1 tbsp Butter, softened

  • 1/4 cup Breadcrumbs

  • 2 boxes Puff pastry

  • 8 tbsp Cranberry salsa plus more for serving

  • 8 slices Cheese, white cheddar, goat, brie, smoked gouda

Directions

  • Heat oven to 400°.
  • Mix ground turkey, stuffing mix, soup, eggs and breadcrumbs. Divide into 8 small patties.
  • Roll out pastry dough cut each into 4 pieces so you end up with 8.
  • Put a tablespoon salsa in the middle, a slice of cheese and a turkey patty. Fold up in puff pastry and flip over seam side down.
  • Whisk one egg and brush each wellington. Dock each with a fork for venting.
  • Bake @ 400° for 35 minutes or use your air fryer!
  • Cool 5 minutes before cutting.
