Thanksgiving Wellingtons

1 lb Ground turkey or chicken
1/2 box Stuffing mix
1 pkg Onion soup mix or 3 tbsp of homemade soup mix
2 Large eggs
1 tbsp Butter, softened
1/4 cup Breadcrumbs
2 boxes Puff pastry
8 tbsp Cranberry salsa plus more for serving
8 slices Cheese, white cheddar, goat, brie, smoked gouda
Directions
- Heat oven to 400°.
- Mix ground turkey, stuffing mix, soup, eggs and breadcrumbs. Divide into 8 small patties.
- Roll out pastry dough cut each into 4 pieces so you end up with 8.
- Put a tablespoon salsa in the middle, a slice of cheese and a turkey patty. Fold up in puff pastry and flip over seam side down.
- Whisk one egg and brush each wellington. Dock each with a fork for venting.
- Bake @ 400° for 35 minutes or use your air fryer!
- Cool 5 minutes before cutting.
