Mushroom & Zucchini Bisque

This easy mushroom and zucchini bisque can be made in a pot or the slow cooker! Creamy and flavorful.

Ingredients and Variations

Ingredients: White button mushrooms, zucchini, yellow onion, chicken broth, Garlic powder, onion powder, evaporated milk , salt and pepper.

Variations: Add in some fresh herbs, fresh dill is wonderful in this, use a variety of mushrooms rather than just button, yellow squash can be used instead of zucchini, any onion can be used as well as seasonings. Cheese can also be added at the end.

Creamy delicious mushroom and zucchini soup.

Ingredients

  • 3 3 medium zucchini, diced

  • 1 1 large onion, chopped

  • 8 oz 8 mushrooms, sliced

  • 4 cups 4 chicken broth

  • 1 tsp 1 onion powder

  • 1/2 tsp 1/2 garlic powder

  • 1/2 tsp 1/2 fresh ground black pepper

  • 1 tsp 1 Kosher salt

  • 1 12oz can 1 evaporated milk

Directions

  • Add all the a slow cooker or pot, simmer on medium-low until veggies are tender or 4 hours on high in a slow cooker.
