Slow Cooker Zippy Potato Soup

This delicious potato soup is creamy, smoky and has a little kick from chilis. You won’t even believe how easy this soup is to make!

Ingredients & Variations

Ingredients: Frozen Southern style hash brown potatoes, green chilis, yellow onions, country gravy mix (sausage flavored), evaporated milk, onion powder, garlic powder, salt and pepper.

Variations: O’brien hash brown potatoes can be used instead, You can use mild or hot green chilis, cheese can be added in the end if desired. Smoked sausage or breakfast sausage can also be added to this soup to make it more hearty.

Ingredients

  • 1 large onion, chopped

  • 1 32oz bag frozen southern style hash browns (potato cubes)

  • 1 4oz can mild green chilis (undrained)

  • 2 2.64oz pcks sausage flavored country gravy mix

  • 4 cups chicken broth

  • 1 12oz can evaporated milk

  • 1 tsp onion powder

  • 1/2 tsp garlic powder

  • 1/4 tsp cayenne pepper * optional

  • 1 – 2 tsp Kosher salt

  • 1/2 tsp pepper

Directions

  • Toss it all in a slow cooker and cook on high for hours or low 6 – 8 hours.
